My love for food started when I was a child, growing up in the East End of London, and my father would bring home the finest cuts of meat from his work as a butcher at the renowned Smithfield Meat Market. I would spend many hours in the kitchen with my Mum, watching her work her magic to recreate the dishes that my Nan had cooked for her.
Having started my career as an apprentice chef at 16 years old at the prestigious Claridge's Hotel in London's Mayfair, my culinary journey began.
Over the next 30+ years I was able to work in, and also run, some of the finest hotels, restaurants and private members club kitchens in the country.
Claridge's, The RAC club, Wentworth Golf & Country Club, Jumeirah Carlton Tower to name but a few. During this time I have been able to experience a wealth of different cooking styles, cultures and techniques that I will show in the dishes that I create for you.
I would like to share with you dishes of my journey in the menus that I will create to make your dining experience a journey too.....
